Abstract: <正> 豆粕是大豆提取油脂后的副产品,含有较丰富的蛋白质(50%左右)。采用冷浸、低温脱溶工艺得到的豆粕(以下简称冷豆粕),由于在加工过程中受热温度较低,蛋白质变性程度较轻,所以其蛋白质的水溶性较好,PDI值(即蛋白质的水分散指数)一般在80左右。为此我们进行了用冷豆粕制豆腐、豆制品和冷豆粕与大豆混合做豆制品的
